Prepare a zesty salmon and asparagus combo in just 30 minutes!
WHAT YOU'LL NEED:
1 ½ lbs salmon, skin on
3 tbsp Salamida Lemon Garlicious Marinade, divided
1 tsp Dijon mustard
¾ teaspoon onion powder
½ teaspoon salt
½ teaspoon pepper
½ lemon, thinly sliced (optional)
1 ½ - 2 lbs asparagus, tough ends trimmed
1 teaspoon olive oil
2 cloves garlic, minced
½ cup finely shredded Parmesan
WHAT TO DO:
Preheat oven to 400 F
Line a rimmed 17" x 12" baking dish with parchment paper
Place salmon in center of pan
In a mixing bowl, whisk together the Salamida's Lemon Garlicious Marinade, Dijon, and onion powder
Brush mixture evenly over top of salmon, then sprinkle with ½ teaspoon of salt and pepper, and top with lemon slices
Toss asparagus with 1 tablespoon olive oil, garlic cloves, and season with salt and pepper
Place asparagus around salmon
Bake for 10 minutes
Remove from oven, toss asparagus, and sprinkle with Parmesan
Return to oven and bake until salmon has cooked through, about 5 - 10 minutes longer
